Acaraje black-eyed pea fritters with shrimp filling

Crisp on the outside and cloudlike within, these black-eyed pea fritters are a celebrated street food with West African origins. The unique texture comes not from flour, but from a batter of soaked and peeled black-eyed peas, a crucial, traditional step that creates an incomparably light crumb. When split and filled with a simple, spicy shrimp mixture, they become a complete, substantial bite that carries a significant culinary history.
