Beef Caldereta

Beef Caldereta is a Spanish-influenced Filipino stew where meat braises in a tomato-soy sauce until it surrenders completely. The technique of browning beef before braising builds a savory foundation that transforms into something deeper during the long simmer. Green and red peppers stirred in at the end stay bright against the dark, rich sauce, providing textural contrast that keeps each spoonful interesting.
