Kondowole (Malawian Toasted Sesame Seeds)
Kondowole is a Malawian snack of sesame seeds toasted until golden and lightly salted. The recipe needs only three ingredients and one pan, so the seeds carry the whole dish. A dry toast first brings out their nutty aroma, and a brief turn in a little oil afterward coats them and sharpens the crunch. Eat them by the handful, scatter them over salads, or use them as a topping for other dishes.
Instructions
Put the sesame seeds in a dry frying pan or skillet and set it over medium heat.
Stir the seeds constantly so they color evenly and do not scorch. They are done when they turn golden brown and smell nutty.
Take the pan off the heat and let the seeds cool for a few minutes.
Sprinkle salt over the seeds to your taste and mix well.
Warm a small amount of vegetable oil in the same pan over low heat.
Tip the salted seeds back into the pan and stir until every seed is coated in a thin film of oil.
Remove the pan from the heat and leave the seeds to cool completely before serving, which lets them crisp up.
