Croatian Bean Stew

This Croatian bean stew builds its savory depth from chorizo rendered until its paprika oils perfume the pot, a technique that transforms humble cannellini beans into something substantial. The combination of shallots and garlic creates a gentle aromatic base, while fresh parsley added at the end provides brightness against the tomato's acidity. It's the kind of one-pot meal that fed Croatian families through winters, requiring only time and good ingredients to deliver genuine flavor.
Instructions
Heat the oil in a pan.
Add the chopped vegetables and sauté until tender.
Take a pot, empty the beans together with the vegetables into it, put the sausages inside and cook for further 20 minutes on a low heat.
Or, put it in an oven and bake it at a temperature of 180ºC/350ºF for 30 minutes.
This dish is even better reheated the next day..
