Dutch Spiced Breakfast Cake (Ontbijtkoek)

Ontbijtkoek is a spiced cake meant to be sliced thin and buttered for breakfast, blurring the line between bread and dessert. The Dutch have perfected this economical cake for centuries, relying on warming spices like ginger and cardamom to carry flavor without excessive fat or eggs. A tender crumb comes from self-raising flour and careful milk incorporation, creating something you'll want to slice fresh and eat standing at the kitchen counter.
