Croatian lamb peka

Peka is a Croatian one-pot wonder where lamb shoulder braises under a bell-shaped lid, steaming vegetables into tender submission. The name refers to the dome itself, traditionally buried in embers, which traps heat and moisture for even cooking. This method, passed through generations along the Dalmatian coast, transforms humble potatoes and peppers into something that tastes of slow time and care. You'll need a heavy covered pot, but the payoff is substantial: deeply flavored meat and vegetables that cook in their own steam, requiring minimal intervention.
