Amala Ọgẹdẹ (Nigerian Plantain Fufu)

Amala ọgẹdẹ is a Nigerian swallow made by stirring plantain flour into boiling water until it becomes a smooth, soft dough. It needs only two ingredients and about 15 minutes, so it comes together faster than most starches meant for soup. You pinch off a piece, shape it in your hand, and use it to scoop up ẹgusi, ogbono or okro soup. The plantain gives a mild, slightly earthy base.
Instructions
Bring some water to a boil in a pot.
Stir in the plantain flour a little at a time, mixing constantly so the dough turns smooth and has no lumps.
Add a splash more water and cook the dough for a few minutes more.
Serve hot, alongside the soup of your choice, such as ẹgusi, ogbono or okro.
