Breakfast worth getting up for
Weekday breakfast is a bowl and a spoon. These are for the other days. The list starts with pancakes that need one bowl and ends with eggs benedict, which needs a hollandaise held over simmering water. Each note says what the recipe is really asking for in time and attention.
Banana Pancakes
1 of 8
Mashed banana, eggs, baking powder and vanilla, no flour. Small pancakes in a nonstick pan with pecans and raspberries on top. The batter is thin, so keep them small.
Pancakes
2 of 8
Flour, eggs, milk and a little oil whisked to a batter and rested for half an hour if you have it. A crepe-style pancake rather than a thick American one, served with berries.
Shakshuka
3 of 8
Onion, chilli, garlic and coriander stalks softened, cherry tomatoes bubbled down for ten minutes, then eggs cracked into wells and cooked with the lid on. Feta over the top. One pan.
Breakfast Potatoes
4 of 8
Diced potatoes with bacon, garlic and a little maple syrup and allspice. The recipe's own tip is to freeze the bacon slices first so they chop cleanly.
Fruit and Cream Cheese Breakfast Pastries
5 of 8
Shop-bought puff pastry cut into squares, a sweetened cream cheese filling and fresh berries, baked at 200C. Ten minutes of work for something that looks like a bakery.
Full English Breakfast
6 of 8
Sausages, bacon, mushrooms, tomatoes, black pudding, eggs, toast and beans on one flat grill, cooked in the order the recipe gives. The order is the recipe; everything lands hot at once.
Smoked Haddock Kedgeree
7 of 8
Basmati cooked in stock with cardamom, turmeric, cinnamon and bay, then flaked smoked haddock, boiled eggs, parsley and lemon. The spiced rice is the point; the fish is the reward.
Salmon Eggs Eggs Benedict
8 of 8
Poached eggs and smoked salmon on toasted muffins under a hollandaise you whisk over simmering water. The sauce is the whole job; everything else waits for it.
