Aadun (Nigerian Corn Flour with Palm Oil)

Aadun is a Yoruba snack of corn flour bound with red palm oil, salt and chile, shaped by hand and passed around with drinks. Nothing goes on the stove in this version; the work is in the mixing and the wait. Two to three hours of resting lets the flour soak up the oil so the mixture holds its shape. In Kogi, cooks stir in ground beans for a different flavor.

Instructions

Put the corn flour, palm oil, chile pepper and salt into a bowl. Mix them together until the oil is worked evenly through the flour and the color is consistent throughout.

Cover the bowl and leave the mixture to rest for 2 to 3 hours. During this time the flour absorbs the oil and the seasoning settles through the mix.

Shape the rested mixture by hand into whatever form you like. Serve it alongside drinks.
