Acid drops are boiled sweets made sharply sour with a spoonful of citric acid, and you can make them with only a few pantry items. The cream of tartar keeps the sugar syrup from turning grainy as it climbs to the hard crack stage. The acid goes in after the syrup comes off the heat, and a dusting of powdered sugar stops the finished drops sticking together.

Instructions

Combine the sugar, water and cream of tartar in a pan and bring to a boil over medium-low heat. Stir gently until the syrup reaches 310°F (155°C), the hard crack stage, or turns pale brown.

To check it, drop a little syrup onto a cold plate. It should harden completely and snap between your teeth once cold.

Pour the syrup onto an oiled heatproof work surface and sprinkle the citric acid over it.

Using a greased spatula, fold the edges of the syrup into the middle and keep working until the acid is thoroughly mixed in.

When the candy is cool enough to touch but still pliable, roll it into sticks and snip off small drop-sized pieces.

Sift powdered sugar over the pieces and shake them to coat. Let them cool and harden completely, then store in an air-tight container.
