Agar Jelly
Agar jelly is a milky almond dessert that sets with seaweed-derived agar instead of gelatin, so vegetarians can eat it. Agar firms up as it cools and holds a clean edge when cut, which is why the jelly can be sliced into neat cubes. Instructions
Put the agar powder, sugar and water in a saucepan and bring the mixture to a boil.
Take the pan off the heat and drain off some of the water.
Let the mixture cool, then stir in the milk and almond extract.
Pour the mixture into a tin and let it cool completely.
Chill the tin in the refrigerator for about 15 minutes, until the jelly is set firm.
Cut the almond jelly into cubes.
Serve the cubes in a glass bowl with the fruit cocktail and syrup.
