Alabama White Sauce
Alabama white sauce is a tangy, mayonnaise-based barbecue sauce that is usually traced to Robert Gibson of Big Bob Gibson's Bar-B-Q in Alabama. The base is thinned with a large amount of apple cider vinegar, which makes it pourable rather than thick, and a little corn syrup and cayenne keep the sharpness in check. It takes one minute in a blender and works as both a late brush-on glaze and a dip.
Instructions
Put the mayonnaise, apple cider vinegar, corn syrup, cayenne pepper, horseradish, lemon juice, salt and black pepper into a very large blender or food processor.
Blend for about 1 minute, until everything is thoroughly combined and the mixture looks smooth.
Pour the sauce into a large bowl.
To use it as a glaze, brush it lightly over chicken, other poultry or meat during the last few minutes of grilling.
Spoon some of the sauce into a separate bowl before you start brushing, so you have clean sauce to pass at the table for dipping.
