Alfajores (Latin American Sandwich Cookies)
Alfajores are Latin American sandwich cookies filled with dulce de leche. The dough is mostly cornstarch with only a little flour, which gives a very tender, crumbly cookie that breaks apart almost as soon as you bite it. Lemon rind in the batter cuts through the sweetness of the caramel filling. Because the cookies need no chilling or rolling, you can go from bowl to baking sheet quickly.
Instructions
Beat the butter in a large bowl until creamy. Add the sugar and keep beating until the mixture looks pale and fluffy.
Add the egg and the egg yolks one at a time, beating well after each. Beat in the vanilla and the grated lemon rind.
Sift the cornstarch, flour, baking powder and salt together into a separate bowl. Add this to the butter mixture and mix until the batter is smooth and well combined.
Drop the batter in small spoonfuls onto a well-buttered baking sheet, leaving a little space between each one.
Bake at 350°F for 15 minutes. Take the cookies off the sheet right away and let them cool completely.
Spread dulce de leche on the flat side of one cookie and press a second cookie on top. Repeat with the remaining cookies.
