Algerian Mint Tea (Atay Djazairi)

Algerian mint tea is a sweet, green tea steeped with a whole bunch of fresh mint and served in small glasses. The one step that sets it apart is the rinse: the tea leaves get a quick wash of boiling water that is thrown away, which takes off the sour edge before the mint goes in. Traditionally it is poured from a height to give a fine foam on top. It takes about half an hour.
Instructions
Bring a saucepan of water to a boil.
Put the dried green tea in the teapot. Pour in about half a glass of the boiling water, stir, then pour that water out. This rinse washes away the sour aftertaste the tea can carry.
Rinse the mint leaves carefully. Fill the teapot with boiling water and add the mint.
Add the sugar cubes to the teapot. Set it over low to medium heat and let it sit for a few minutes.
The tea is ready when the water in the pot comes to a boil. Serve it in small glasses.
