Alkubus (Nigerian Steamed Bread)

Alkubus is a steamed wheat bread from northern Nigeria, and it has no crust at all. Cooking the dough over steam rather than in an oven gives a soft, pale, moist crumb, and the method needs nothing more than a bowl, a greased mold and a steamer. The dough is a simple yeasted one, lifted further by baking powder, so it is an easy way to try steaming bread at home.
Instructions
Sift the flour into a large mixing bowl so the dough starts out light and free of lumps.
Stir in the yeast, salt and baking powder, then add water a little at a time until the mixture comes together as a dough.
Cover the bowl and leave the dough to rise for 1 hour.
Press the risen dough gently to deflate it. Grease a cooking mold with vegetable oil and transfer the dough into it.
Cover the mold and set it in a steamer. Steam until the bread is cooked through, which you can check by pushing a skewer into the center and seeing it come out clean.
Take the mold off the heat and let it cool, then turn the bread out of the mold and serve.
