Amala (Yoruba Yam Swallow)

Amala is a smooth, dark, soft swallow from the Yoruba people of Nigeria, made from nothing more than yam flour and water. The whole skill is in the stirring, since constant mixing as the flour goes into the boiling water is what keeps the dough free of lumps. It is meant to be torn off in pieces and dipped into soups such as ewedu, gbegiri, ogbono or efo riro.
Instructions
Pour water into a pot and bring it to a boil over heat.
Add the yam flour to the boiling water while stirring, and keep mixing without stopping so that no lumps form.
Check the texture and adjust it as you like. Add a little more water if it is too stiff, or a little more yam flour if it is too loose.
Stir the mixture well, cover the pot, and let it cook for about 10 minutes.
Serve the amala hot, alongside a soup of your choice.
