Apple BBQ Sauce
Apple BBQ sauce is a sweet, tangy glaze for ribs and grilled chicken, made in one pot from a short list of pantry items. Apple jelly and apple cider vinegar give it a fruit note that plain ketchup sauces lack, while blackstrap molasses adds a dark, slightly bitter depth. A little chipotle hot sauce brings smoky heat. It keeps for three weeks in the fridge, so one batch covers several cookouts.
Instructions
Pour the ketchup, blackstrap molasses, apple jelly, apple cider vinegar and chipotle hot sauce into a large saucepan. Stir to combine so the jelly starts to loosen into the ketchup.
Set the pan over medium high heat and bring the mixture to a boil. Stir now and then so the molasses and jelly do not stick to the bottom.
Keep cooking until the sauce has reduced to about 4 cups. It should look thicker and glossy, and it will coat the back of a spoon.
Let the sauce cool, then pour it into a large mason jar or a squirt bottle. Keep it in the refrigerator for up to 3 weeks, and brush it onto ribs or chicken on the grill.
