Apple Cobbler
Apple cobbler is a baked apple dessert under a soft, biscuit-style topping that you drop onto the fruit in spoonfuls. The apples are simmered with a little cornstarch before baking, so the filling is already thick and tender when the topping goes on. Compared with apple crisp, which has a crunchy oat layer, the topping here is cakey and quick to mix. The same method works with other fruit.
Instructions
Combine the apples, ⅔ cup sugar and 4 Tbsp of the water in a large saucepan. Cover and simmer for about 5 minutes, until the apples are tender when pierced.
Stir in the remaining 2 Tbsp water and the cornstarch. Cook, stirring, until the juices turn thick and bubbly.
In a medium bowl, stir together the flour, 2 Tbsp sugar and baking powder. Cut in the butter until the mixture looks like large crumbs, then set it aside.
In a small bowl, stir the egg and milk together. Pour this into the flour mixture and stir just enough to moisten it, so the topping stays light.
Spoon the hot apple filling into a 2-quart square baking dish. Use a large spoon to drop the topping over the fruit in small mounds.
Bake in a 400 °F (205 °C) oven for 20 to 25 minutes. Serve warm.
