Apple Fritters
Apple fritters here start as a paste rather than a batter, so the fruit is blended with sugar, egg and butter and then rolled into balls. That gives a dense, evenly sweet interior instead of loose chunks of apple in dough. A coat of flour and a short rest help the outside hold together in the fryer. Peanut or canola oil keeps the flavor clean, and a dusting of powdered sugar finishes them.
Instructions
Put the chopped apple, granulated sugar, beaten eggs, butter and kosher salt into a food processor. Run it until the mixture turns into a thick paste.
Roll the paste into balls about 3 inches across. Roll each ball in flour until coated, then set the balls aside for 2 to 3 minutes.
Heat the peanut or canola oil to 375°F (190°C). Lower the balls into the hot oil and fry them until they are golden brown and cooked through.
Lift the fritters out and drain them on a cooling rack. Dust them with powdered sugar before serving.
