Apple Pudding

Apple pudding is a quick, small-batch dessert that uses far more nuts than flour. A cup of chopped walnuts or hickory nuts sits in a batter held together by just a quarter cup of flour and one egg, so the result is chewy and nutty, with pieces of apple running through it. It mixes in one bowl, bakes in a Dutch oven or a square pan, and serves eight.

Instructions

Heat the oven to 325°F (160°C) and grease a Dutch oven or a 9 x 9-inch pan.

Beat the sugar and egg together in a large bowl until the mixture is smooth.

Beat in the flour, baking powder, salt and vanilla until no dry flour remains and the batter is even.

Stir in the chopped walnuts or hickory nuts and the chopped apples. The batter will be thick and mostly nuts and fruit.

Scrape the mixture into the greased Dutch oven or pan and spread it level.

Bake for 30 minutes. Serve it as it is, or top it with whipped cream or ice cream if you like.
