Apple Tapioca

Apple tapioca is a baked apple dessert in which each cored apple is filled with brown sugar, cinnamon and butter, then covered in a clear, softly set tapioca. The original recipe, from an early twentieth century home cookery course, calls for sour apples because their tartness stands up to the sugar and gives the pudding more character. Canned peaches or pineapple also work, and need less sugar and baking.

Instructions

If you are using pearl tapioca, soak it for 4 or 5 hours, then drain off all the water. Minute tapioca needs no soaking. Stir the tapioca into the boiling water along with the salt.

Cook the mixture in a double boiler until every pearl of tapioca has turned entirely transparent.

Peel and core the apples and set them in a buttered baking dish. Fill each cavity with brown sugar and cinnamon, then put a piece of butter on top of each apple.

Pour the hot tapioca over the apples and bake in a hot oven until the apples are soft when pierced.

Serve the dessert hot or cold, with sugar and cream at the table.
