Apricot Chicken Salad
This apricot chicken salad is a one-bowl lunch for a single person that takes about 15 minutes. Strained yogurt is thicker than the regular kind, so it coats the chicken without turning watery. Chopped dried apricots give chewy, tart sweetness, the apple and celery add crunch, and a spoonful of honey ties it together. Hot paprika is optional and adds a gentle warmth. Double or triple it for company.
Instructions
Pull the cooked chicken from the bones and shred it into bite-sized pieces. Put the meat in a mixing bowl.
Add the chopped dried apricots, the finely chopped apple and the chopped celery to the bowl with the chicken.
Spoon in the strained yogurt and the honey. Add a pinch of hot paprika if you want some heat, along with any other seasonings you like.
Mix everything well until the chicken and fruit are evenly coated in the yogurt and no dry pockets of honey remain. Serve right away.
