Ashwe Soup
Ashwe soup is a quick Tiv soup from Nigeria, built around the tart, slightly sour leaves of the roselle plant. Those leaves carry the dish, so the rest stays simple: a blend of pepper, tomatoes and onions, a little palm oil, and beef. Everything goes into one pot and cooks for only a few minutes, which makes this a practical choice when you want a soup with a distinct regional character without a long simmer.
Instructions
Blend the pepper, tomatoes and onions together into a mixture.
Pluck the ashwe leaves from their stems and chop them.
Heat a small amount of palm oil in a pot. Add the blended mixture, the chopped ashwe leaves and the beef.
Season with salt to taste and stir slowly.
Cook for a few minutes, until the leaves have softened and the beef is done, then serve.
