Asondo (Nigerian Dried Sweet Potatoes)

Asondo is a crunchy dried sweet potato snack from the Tiv people of Nigeria. It uses just two ingredients, sweet potatoes and water, and the work is all in the drying. Boiling the slices first sets them up to turn crisp rather than leathery. You choose the cut, from thin chips to thicker sticks, and you can dry them in the sun or in a dehydrator. It keeps well and needs no oil.
Instructions
Cut the sweet potatoes into pieces in whatever shape and size you like. Keep the pieces fairly even so they cook and dry at the same rate.
Bring a pot of water to a boil and cook the sweet potato pieces in it.
Drain the pieces and dry them in the sun for 2 to 3 days. If you prefer, use a dehydrator instead.
The asondo is ready when the pieces are crispy all the way through.
