Atyever soup is a slippery jute leaf soup from the Tiv people of Nigeria. The leaves are the point: when stirred, they release a silky, slick texture that carries the red palm oil, the fish and the heat of blended pepper. It uses seven ingredients and cooks in a few minutes once the leaves are boiled, so it suits a cook who wants a traditional Nigerian soup without a long shopping list.

Instructions

Put the rinsed, sliced atyever leaves in a pot with enough water to cook them, and boil until the leaves are soft.

Add the palm oil, the rinsed fish and the blended pepper to the pot with the boiled leaves. Cook for a few minutes so the fish and pepper heat through and the oil colors the soup.

Crumble in the maggi cubes and season with salt to taste. Stir slowly and steadily until the soup turns slippery, which is the texture you want from the jute leaves.

Serve the soup while it is still hot.
