Avocado Coconut Smoothie

This avocado coconut smoothie takes about five minutes and needs only a blender. Ripe avocado gives the drink a thick, creamy body that most fruit smoothies lack, and coconut milk adds richness while honey sweetens it gently. A handful of spinach can go in without changing the taste much. The ratio of milk to ice sets the thickness, so you can adjust it to suit your glass.
Instructions
Scoop the flesh of a ripe avocado into a blender. Add the coconut milk, honey and the spinach if you are using it.
Blend until the mixture is completely smooth, with no flecks of avocado or spinach left.
Add the ice and blend briefly to chill the drink. Pour into a glass and serve cold.
For a thinner smoothie, stir in more coconut milk. For a thicker one, blend in more ice. Use coconut milk rather than coconut water, which changes the result.
