Avocado Relish

Avocado relish is a four-ingredient spread that takes only a bowl and a fork. The lemon juice does two jobs, adding a clean sour note to the rich flesh and slowing the browning that avocado is prone to. Paprika gives it a mild warmth and a rusty tint against the green. The short rest before serving lets the salt and spice spread evenly through the mash.

Instructions

Cut the avocados open, then scoop the flesh out of the peels and discard the pits.

Put the flesh in a bowl and mash it with a fork. Add the lemon juice, a little paprika and a pinch of salt, and mix until the relish is as smooth or as chunky as you like.

Taste and add more paprika or salt if it needs it. Let the relish rest for 5 to 10 minutes so the seasoning settles in, then serve.
