Ayran is a Turkish drink of yoghurt thinned with water and seasoned with salt, and it takes about five minutes to make. The salt is the point: it turns plain yoghurt into a sharp, cooling drink that suits grilled meat. In Turkey it is the usual partner to doner, kebab and pastry, and rural hosts offer it to guests as a standard drink. Beat it well for a light foam on top.

Instructions

Spoon the yoghurt into a bowl and beat it until it looks smooth and has no lumps.

Pour in the water and keep beating until the mixture is evenly blended and thin enough to pour. You can also put both in an electric blender and run it until smooth.

Stir in salt to taste, and add crushed dried mint if you like it. Taste and adjust the salt, since it is what makes the drink savory and refreshing.

Chill the ayran well in the refrigerator. Serve it in tall glasses with ice.
