Babi Panggang Sauce
Babi panggang sauce is a sweet and tangy tomato sauce made to go with grilled pork. The dish is a Dutch fusion of Indonesian grilled pork, and this sauce reflects that mix. Sugar and sherry soften the tomato, while chicken broth and a little garlic give it body. It needs one saucepan and about five minutes of boiling, so it is quick to make while the meat cooks.
Instructions
Peel the onion and chop it small. Heat the oil in a saucepan over medium heat.
Add the chopped onion and the garlic to the hot oil and cook them briefly, stirring so they do not catch on the bottom of the pan.
In a separate bowl or jug, stir together the chicken broth, sugar, sherry and tomato mash until the sugar is mixed in.
Pour the tomato mixture into the saucepan with the onion and garlic. Bring it to a boil, then keep stirring and let it boil for 5 minutes before serving with grilled pork.
