Baked Potatoes

A baked potato needs little more than a fork, some oil and a heat source, which is why it suits a campsite so well. Unlike many camping foods, the potato takes up no cooler space, and a foil wrapper keeps the cleanup simple. This version also covers the microwave and the home oven, so the same plain method works in any kitchen, topped with butter, sour cream or leftovers.
Instructions
Scrub the potato clean and pierce the skin all over with a fork. This lets steam escape and helps the potato cook evenly.
For campfire cooking, wrap the potato in a piece of heavy-duty foil that has been lightly oiled, and seal it closed. Cook it over medium-hot coals for 45 minutes, or until the potato feels soft when squeezed.
For the microwave, prepare the potato the same way but wrap it in waxed paper instead of foil. Set it on a piece of paper towel and microwave on high for 8 minutes. Be careful, because the potato will be extremely hot when it comes out.
For the oven, preheat to 190°C (375°F). Place the prepared potato in the oven and bake for 1 hour.
When the potato is cooked, cut it open, either into four pieces after microwaving or by puncturing the skin and separating it from the flesh after baking. Serve with salt and butter or sour cream, or with other toppings such as spicy beans, avocado, salsa, mushrooms or grated cheese.
