This balsamic dressing is a three-to-one mix of olive oil and aged balsamic vinegar that takes five minutes to make. Aged balsamic is the point here. It is rounder and slightly syrupy compared with young, sharp vinegars, so a small amount gives the dressing real depth. Pouring the oil in slowly while whisking makes a smooth, lightly thickened emulsion that clings to the leaves instead of pooling at the bottom of the bowl.

Instructions

Pour the balsamic vinegar into a small bowl. Add a pinch of kosher salt and a few grinds of black pepper, then whisk until the salt looks dissolved.

Whisk constantly while you add the olive oil in a thin, slow stream. Keep going until the dressing looks glossy and slightly thickened, which means the oil and vinegar have come together.

Taste the dressing and adjust the salt and pepper if it needs it. Spoon it over the salad greens just before serving so the leaves stay crisp.
