Barbecue Fried Rice
Barbecue fried rice turns leftover rice into a quick supper with a smoky, sweet and savory edge. Barbecue sauce and black soy sauce coat the grains, while sesame oil adds a toasted note and red chillies bring steady heat. Minced pork cooks in minutes, so the whole pan is ready in about 20 minutes. The long list of optional toppings, from fried egg to shrimp crackers, lets each plate be built to taste.
Instructions
Warm the olive oil and sesame oil together in a non-stick pan. Add the minced garlic and red onion and fry, stirring, until the smell turns fragrant and both are golden brown.
Tip in the red chillies and minced pork. Keep stirring until the pork loses its raw pink color.
Add the carrot, horseradish and scallions, then the cooked rice. Pour in the barbecue sauce and black soy sauce, and season with the salt and pepper.
Stir everything until the rice is evenly coated and no pale patches remain. Serve hot with whichever toppings you like, such as a fried egg, pickles, tomato, cucumber, fried onion, shrimp crackers, steak or extra vegetables.
