Barbecue Rub
This barbecue rub takes two minutes and makes a big batch of a sweet, smoky, moderately hot seasoning for the grill. Brown sugar and a full cup of paprika form the base, while chipotle and cayenne add heat and smoke. Dried rosemary and dehydrated lemon peel give it a bright, resinous edge that most store-bought blends lack. Mix it once and keep it in the pantry.
Instructions
Measure all of the ingredients into a large bowl or straight into an airtight container with enough room to stir.
Stir or shake the mix until the brown sugar is spread evenly and no clumps or streaks of single spices remain.
Close the lid tightly so the sugar and spices stay dry and loose until you are ready to use the rub.
