Barbecue Sauce (Kansas City-Style)
A sweet, tangy, smoky Kansas City-style barbecue sauce that comes together in one saucepan in 20 minutes. Ketchup forms the base, while Worcestershire sauce, vinegar and hickory liquid smoke supply the sour and smoky notes, and two kinds of sugar round it out. The contributor says it tastes close to bottled supermarket sauces, so it is an easy way to make that familiar flavor at home.
Instructions
Put the ketchup, Worcestershire sauce, butter or margarine, vinegar, mustard, minced onion, liquid smoke, red pepper sauce, brown sugar, granulated sugar and salt into a saucepan.
Stir everything together until the sugars and mustard are evenly mixed into the ketchup.
Set the pan over low heat and let the sauce simmer for 20 minutes, stirring now and then so nothing sticks to the bottom. The butter should be fully melted and the sauce glossy and well blended when it is done.
Because the sauce is high in sugar, brush it onto meat near the end of cooking or after cooking, so it does not burn.
