Basic Chai
Basic chai is a milk tea built from fresh spices boiled in water before the leaves ever go in. That order matters: the cardamom, cinnamon and grated ginger get a full minute to flavor the water, then the tea steeps in it, covered, so nothing turns thin. Milk is heated separately and added at the end, with sugar to your taste. It makes two cups and suits samosas or kachoris.
Instructions
Bring 1 ½ cups of water to a boil in a small pot. Add the fresh spices and let them boil for 1 minute so the water takes on their scent.
Stir in the tea leaves, put a lid on the pot, and leave it to steep for 3 to 5 minutes. The longer you steep, the stronger and more bitter the tea will be.
While the tea steeps, bring the milk to a boil in a separate pan.
Strain the tea through a sieve to remove the leaves and spices. Pour in the hot milk, stir in sugar to taste, and serve hot with samosas or kachoris.
