Basic Cobbler
Basic Cobbler is a one-dish fruit dessert that needs only a whisk, a bowl and a baking dish. The butter melts in the pan first, then the batter goes on top without stirring, so the batter bakes up around a rich, buttery base while the fruit settles into the surface. Peaches, blackberries or cherries all work, which makes it easy to cook with whatever fruit is in season.
Instructions
Preheat the oven to 350°F (175°C).
Put the butter in a deep 9½ x 12-inch baking dish and set the dish in the oven so the butter melts while you make the batter. If your butter is unsalted, add a small pinch of salt to the dish.
In a bowl, lightly sift together the flour, baking powder and sugar. Make a well in the center, pour in the milk, and whisk with a wire whisk until the batter is smooth.
Take the dish out of the oven. Pour the batter over the melted butter without stirring. Spoon the fresh fruit evenly over the top, again without stirring.
Return the dish to the oven and bake uncovered until the top is golden brown.
