Basic Mulling Spice
Basic Mulling Spice is a five-minute mix of whole spices that you can keep on hand for warming drinks. Because nothing is ground, the cinnamon, nutmeg, cloves and allspice release their flavor slowly when heated in liquid. Crushing the cinnamon and nutmeg with a hammer is the only real work, and the grated orange peel adds a citrus note. Make a jar early in the season and it is ready whenever you need it.
Instructions
Put the cinnamon sticks and the whole nutmeg into a large ziplock bag and press out most of the air so the bag does not burst when you strike it.
Crush the cinnamon and nutmeg with a hammer until they break into rough chips. The pieces do not need to be even, but none should still be a whole stick.
Tip the chips into a bowl and add the whole cloves and whole allspice. Stir everything together so the spices are evenly spread.
Add the grated orange peel from one whole orange and mix it through the spices.
Spoon the mix into an airtight container and close the lid firmly. Keep it stored this way until you are ready to use it.
