Basic Pizza Sauce
Basic pizza sauce starts with a can of smooth pasta sauce and a handful of sugar, and it takes about five minutes. The sugar softens the acidity and vegetal edge of the tomatoes, which gives the sweeter, rounder flavor of American chain-style pizza. A drizzle of good extra-virgin olive oil adds richness. It is a practical shortcut for a weeknight pizza at home.
Instructions
Roll out your pizza dough, then ladle the canned sauce over it in the amount your pizza recipe calls for.
Take a handful of sugar and sprinkle it over the sauce. Keep adding until the surface looks white but you can still see the crystals dissolving into the sauce.
Drizzle with olive oil if you like. You can also brush the dough with oil before the sauce goes on.
Scale the sauce and sugar to the size of your pizza, since the amounts depend on how much dough you are covering.
Make it personal.
