Bean and Bacon Bake
Bean and Bacon Bake is a quick microwave side that turns a pantry can of green beans into something worth putting on the table. The potato soaks up the reserved bean liquid and smoky bacon fat as it steams under the wrap, so the whole dish tastes seasoned from within. Sliced almonds add a crisp finish. It needs only ten minutes of cooking and one baking dish.
Instructions
Peel the potato and cut it into small dice. Crumble the crisp bacon into small pieces.
Drain the green beans, saving ½ cup of the liquid from the can.
Put the beans, the saved bean liquid, the bacon and the diced potato in a microwave-safe baking dish. Sprinkle the onion powder and salt over the top.
Cover the dish with clear wrap and microwave for 5 minutes. Stir, cover again and microwave for another 5 minutes, until the potato is tender.
Let the dish stand for 5 minutes, then scatter the sliced almonds over the top and serve.
