Bean Jahni Soup (Jani me Fasule)
Jani me fasule is an Albanian white bean soup built on very little: beans, onion, tomato, herbs and a generous half cup of olive oil. The oil is cooked with the onion first, then simmered into the beans, which gives the broth a rich body without any meat. Mint and chile powder add a fresh note and a gentle heat. A pressure cooker cuts the long simmer to 30 minutes.
Instructions
Put the beans in a pot of hot water and boil them uncovered for 5 minutes, then drain and rinse them. Return the beans to a covered stock pot with 3 cups of hot water and boil for another 15 minutes.
In a separate pan, cook the onion in the olive oil until it turns yellow. Stir in 2 tablespoons of stock taken from the bean pot, along with the tomato sauce, parsley, salt and chile powder to taste.
Cook this mixture for 10 minutes, until it has reduced to a thick sauce. Pour all of it into the bean pot.
Add the chopped mint and cover the pot tightly. Cook over low heat for 2 hours, or for 30 minutes in a pressure cooker.
The soup is ready when the liquid is thick and sits about ½ inch (1.5 cm) above the beans. Serve hot.
