Beef Burgers with Chipotle Mayo
Beef burgers with chipotle mayo pair a simply seasoned grilled patty with a smoky, spicy spread. Ground chuck brings the fat that keeps a burger juicy, and a pinch of cayenne on the meat adds quiet heat. The sauce takes only minutes: mayonnaise stirred with chipotle purée, made ahead and chilled while you grill. Cheese is optional, so the beef and the mayo can carry the whole burger.
Instructions
Stir the mayonnaise, chipotle purée, salt and black pepper together in a small bowl. Cover it and keep it in the refrigerator until the burgers are ready.
Divide the ground chuck into 4 equal portions and shape each into a patty. Season both sides of the patties with salt, black pepper and cayenne pepper.
Oil the grates of a medium grill well, then lay the patties on it. Cook them until a thermometer in the center reads 160°F (over 70°C), which gives a medium burger.
If you are using cheese, lay a slice on each patty near the end and close the grill lid for 1 minute, until the cheese has melted.
Spread the chipotle mayo on the cut sides of the buns. Set a patty on each bottom half, close with the top and serve.
