Beef Gravy Soup
Beef gravy soup is a short, plain soup adapted from the Household Cyclopedia of 1881. It starts with sliced beef and onions cooked over the vegetables with only a little beef broth, so the meat and onions give up their own juices before the vegetable broth goes in. Carrots, turnips or radishes all work as the root vegetable. It takes about 35 minutes and feeds six to eight.
Instructions
Put the sliced onions and root vegetables in a large stock pot. Lay the sliced beef on top and pour the beef broth over it.
Set the pot over low heat and bring it to a gentle simmer. Cook for 30 minutes, stirring well from time to time, until the beef and vegetables look cooked through.
Pour in the vegetable broth and add salt to taste. Bring the soup back to a simmer, then serve.
