Beer Marinated Shrimp
Beer Marinated Shrimp is a two-pound batch of shrimp soaked overnight in beer, onion, garlic and Tabasco, then cooked fast in butter. The long soak does the work, so the cooking takes only a few minutes at the end. The beer adds a malty depth, and the Tabasco is yours to adjust, starting from a tablespoon. Plan ahead, since this is not a dish for a rushed evening.
Instructions
Put the sliced onion, minced garlic, peeled shrimp and beer into a plastic or glass bowl. Avoid a metal bowl, since the marinade will sit for many hours.
Season the mixture with Tabasco, salt and pepper. If you are unsure how hot you want it, start with 1 tablespoon of Tabasco and adjust from there.
Cover the bowl and leave the shrimp to marinate overnight.
Lift the shrimp out of the bowl and throw the marinade away. It has done its job and is not used again.
Melt a little butter in a pan and sauté the shrimp until they turn pink and are cooked through. Take them off the heat promptly, because overcooked shrimp turn rubbery. You can also grill them instead.
