Betty's Salad
Betty's Salad is a Midwest spinach salad built from the menu of Timko's Soup and Such, a restaurant in West Toledo, Ohio. Layers of spinach, egg, bean sprouts, water chestnuts and a full pound of bacon sit under a sweet and tangy dressing of catsup, vinegar and onion, blended smooth. The dressing is the point: Betty Timko's version is still bottled and sold at regional grocery stores in Ohio.
Instructions
Drain the bean sprouts, and drain and slice the water chestnuts if you are using them. Slice the hard boiled eggs and crumble the fried bacon.
Layer the salad ingredients in a bowl in the order they appear in the ingredient list, starting with the spinach.
Put the oil, sugar, salt, catsup, white vinegar, Worcestershire sauce and minced onion in a blender. Blend until the dressing is smooth and well mixed.
Pour the dressing over the layered salad. Store the salad in the refrigerator until you are ready to serve it.
