Binagoongan (Sautéed Pork with Shrimp Paste)

Binagoongan is a Filipino dish of pork cooked in bagoong alamang, the fermented shrimp paste that gives it a deep salty, savory punch. This version adds baby shrimp and bitter melon, and the vinegar cuts through the richness of the pork while the paste does the seasoning. It is meant to be eaten over plenty of white rice, which tames the saltiness and soaks up the sauce.
Instructions
Heat the oil in a large pan and fry the pork pieces until they are browned on the outside.
Add the crushed garlic, sliced onion and tomato to the pan. Sauté them with the pork until the onion softens and the tomato begins to break down.
Stir in the baby shrimp so they pick up the flavor of the pan.
Add the bagoong alamang, bitter melon, vinegar and water, and stir to combine. Bring to a simmer and cook until the pork is tender when pierced with a fork.
If you prefer a thicker sauce, keep simmering until the liquid has reduced to the consistency you like. Serve hot with plain white rice.
