Bison Loaf
Bison loaf is a classic meat loaf made with ground bison in place of beef. Bison is a lean meat, so this recipe relies on milk-soaked bread crumbs and an egg to keep the slices moist and hold together. Instructions
Heat the oven to 300°F (150°C). In a large bowl, combine the ground bison, bread crumbs, egg, milk, chopped onion, chopped green pepper, Worcestershire sauce if you are using it, garlic powder, salt and pepper. Mix until everything is evenly distributed.
Shape the mixture into a loaf by hand, or pat it into a lightly oiled loaf pan.
Bake for about 45 minutes. The loaf is done when the internal temperature reaches 160°F (72°C), so check it with a meat thermometer.
