Black Pepper Syrup
Black pepper syrup is a quick sweet-hot sauce made from just pepper, sugar and water, with a little lemon if you like. The pepper gives the sugar a gentle heat and turns the syrup light brown as it warms. It takes minutes at the stove and needs an hour to cool. Spoon it over fresh fruit or fruit with soured cream, where the spice cuts through the sweetness.
Instructions
Put the ground pepper, water, sugar and lemon juice, if you are using it, into a small saucepan and stir to combine.
Set the pan over low heat and warm it slowly, stirring now and then. Keep going until the sugar has fully dissolved and the liquid has turned a light brown.
Take the pan off the heat and leave the syrup to cool for 1 hour before using it.
Spoon it over fresh fruit, or serve the fruit with soured cream and drizzle the syrup on top. Lemon rind or lime can stand in for the lemon juice.
