Blue Cheese Dressing

This blue cheese dressing is a creamy, tangy mix of mayonnaise, sour cream and buttermilk, with real chunks of cheese stirred in at the end. Keeping the cheese out of the whisking step is the useful trick here: the base turns smooth while the cubes and crumbs stay intact, so each spoonful has texture. Any blue cheese works, so use whichever you like best. It was adapted from a buttermilk ranch dressing.
Instructions
Put the lemon juice or vinegar, buttermilk, mayonnaise, sour cream, salt, pepper, garlic powder and onion powder in a bowl. Whisk until the mixture is smooth and even, with no streaks of mayonnaise or sour cream left.
Cut the blue cheese into cubes of about ½ inch (1 cm). Most blue cheese is crumbly, so expect a pile of crumbs along with the larger chunks, and keep both.
Pour the whisked mixture into a serving container. Stir in the cheese cubes and crumbs so they are spread evenly through the dressing, and serve.
