Boilo (Hot Spiced Citrus Whiskey)
Boilo is a hot, spiced citrus whiskey drink served at Christmas in Pennsylvania and the surrounding north-east. Oranges, lemons, raisins and honey simmer slowly in a crock pot with whatever spices you favor, from cinnamon to caraway. The whiskey goes in only after straining, so the heat does not cook off the alcohol. It makes a big batch, enough for a crowd, and reheats easily in single servings.
Instructions
Peel the oranges and lemons, then cut up the fruit and squeeze the juice into a crock pot. A garlic press, potato ricer, juicer or fruit squeezer all work. Put the leftover pulp into the crock pot too.
Add the raisins, honey and your choice of spices, and stir. Do not add the whiskey at this stage.
Turn on the crock pot and cook for about 2 to 4 hours, stirring now and then. The mixture is ready when the fruit pulp has cooked down.
Strain the liquid into a pitcher, pressing the fruit down in the strainer to extract all the liquid.
Stir the whiskey into the pitcher. Heating the whiskey, even briefly, lets the alcohol begin to evaporate, which is why it goes in at the end. Taste and add more whiskey if you want it stronger.
Serve hot in shot glasses, espresso cups or coffee mugs. After the first round, reheat individual servings in the microwave.
