Braai (South African Barbecue)
Braai is the South African way of grilling meat over a wood fire, and it is the centerpiece of family gatherings and parties across the country. This version keeps the seasoning simple: black pepper, ginger and curry powder rubbed into chunks of meat or seafood, then rested for an hour. Skewering the pieces and turning them over real wood smoke gives a browned, dry-edged result that suits a crowd.
Instructions
Rub the chunks of meat or seafood all over with the black pepper, ginger and curry powder, making sure every piece is coated.
Leave the seasoned pieces to rest for 1 hour so the spices have time to take hold.
Thread the meat or seafood onto skewers, then brush the pieces with virgin olive oil.
Build a wood fire and grill the skewers over it, turning them as they cook. They are done when the meat is browned on the outside and dry to the touch.
Make it personal.
